  1. Complete hiring paperwork — Collect required employment, tax, and direct-deposit forms and confirm work eligibility before the first shift.
  2. Enroll in responsible-service certification — Require TIPS, ServSafe Alcohol, or Smart Serve (or your jurisdiction's required program) and confirm completion before any solo alcohol service.
  3. Issue and walk the SOP manual — Hand over this manual and review the SOPs relevant to the role, emphasizing the safety and compliance deferrals.
  4. Set up system access — Create a POS user and any other logins, and review cash, tab, and comp/void rules from the relevant SOPs.

  6. Verify competence — Have the trainer confirm the new hire can open, pour to spec, run a tab, refuse service, and close before going solo.
