- Scope: Covers operational barista onboarding. The other SOPs in this manual are the training curriculum — the trainer hands them over, teaches each, and signs off when the new hire can do it your way. Food-handler certification follows ServSafe / local code.

The procedure, step by step
- Week 1: orient + basics — Cover policies, safety, cash, and the menu/recipes; train the POS and counter service; pair with an experienced (patient) barista.
- Teach the how and why — Explain the reason behind the standards (dial-in, milk texture, cleaning) so they hit them unsupervised.
- Build bar skills — Train espresso (dial-in, builds) and milk steaming to your recipes, station by station, shadowing then supervised.
- Cross-train and check in — Cross-train stations, and hold check-ins through a probation period with feedback.
- Sign off at the standard — Sign off when they can run their station at speed and quality under a peak (a final benchmark).
